Many of my students are not able to open PDF's in the student app. They get some weird error message when they click to open the PDF. It's happening to students all over the school. I tell them to use the web site, which works fine. Is anyone else having this issue? Any known fixes?

Would you abe able to share a screenshot or a photo of the error from the student's perspective? I know I've seen several on students' iPads where I teach, and I wonder if they are similar.
Also, this sounds like something that students should report to Canvas Support. (How do I get help with Canvas as a student?) Your district/institution's Canvas Admin can then escalate the cases to Canvas Support.

same problem, pdf file error message in app...
We've also had reports of this same issue in our district. PDF's open for some students via the mobile app, but not others. All students can open the same PDF via web browser.
same issue still here. works for some in the app, but not for all. web OK.
Even after the 6.6.3 update, we've seen that if clearing the cache with the app's next launch, uninstalling and then reinstalling the app helps. If students continue to see the error after those steps, encourage them to submit a ticket. (How do I get help with the Student app on my iOS device?)
