For analytics you might check out the existing information on analytics ( https://community.canvaslms.com/docs/DOC-10460-canvas-instructor-guide-table-of-contents#jive_conten...) as well as the information posted about Analytics Beta (Analytics Beta - Table of Contents). I have been very happy about the information I can get from Canvas in terms of analytics and look forward ot using Analytics Beta more in the future!
Regarding plagiarism, this post has some good information on 3rd party software that works well with Canvas, how to check Plagiarism on Canvas?. We have TurnItIn at my institution and have been happy with the integration to Canvas. I know of others that use other software, but in conversations with them they seem similarly satisfied with how they function within Canvas.
Canvas does have a built in videoconferencing tool called BigBlueButton (see the information on Conferences here, https://community.canvaslms.com/docs/DOC-10460-canvas-instructor-guide-table-of-contents#jive_conten...). There are free and paid versions of BBB, and some institutions will use other other videoconferencing tools, such as Zoom, that they integration within Canvas.
