Assignments, quizzes and discussions can all be set to only be available to a specific section. So for those items you could create a section just for them Only they can access them or eve see them.
Once the appropriate sections or group is created and the students enrolled.........

Many schools restrict faculty from creating sections, so you may need the assistance of your school's Canvas admin/support department.
