I'm a new user to Canvas as an instructor (FFT).

Within a course, can I assign only specific pages or modules to certain students? Not all of the students enrolled to a particular course will need to complete every activity posted.

Canvas Groups allows you to group specific students so they can work on assignments and quizzes assigned to only that group:

If you want to separate further and be more granular with gradable content, use Sections. 

Assignments, Announcements, Discussions, and Quizzes can all be assigned to a specific section.

However, all pages and modules in a course are available to all enrolled students.
