I would like just my instructional coach to see what I have accomplished so far.

Welcome. You can certainly share your course with just one person. You can use the People part of Canvas to add them to whatever role you would like, see How do I add users to a course?. Keep in mind that if you add them in a student role that you will have to publish the course How do I publish a course? and content https://community.canvaslms.com/docs/DOC-10114-4152180497 for them to be able to see your material.
