With canvas grading, if a student has a missing assignment it automatically puts 90 as a grade. If the scale score is from 0 to 100, why does the computer put 90 beside a missing assignment for a student?

It sounds like you are using the missing submission policy. It also sounds like you have the percentage set to 90. If you want and are able to, you can turn it off; or you can set it to be 0%.
