Can you edit / change the name of a course?

Hello  @amanda_childres ...

If you are an instructor, and if your school allows it, you may be able to change your course name on your own.  Please check out the following Guide: How do I change a course name and course code?.

Another option for you is to use the course nickname feature...which would allow you to give your course a custom nickname that only you can see.  These Guides are nearly identical.  See the section on "Create Nickname".
