Is there a way to change the titles of grade status? I know how to change the colors, but would like something different besides dropped or excused.

Hello edawson4850 Thank You for posting your question. To my knowledge, you can only modify the colors of those statuses in the New Gradebook...per the information given in How do I change the color for a grading status in the New Gradebook?.
You might consider submitting a new Feature Idea about this if you would like to see Instructure implement this kind of thing. Please check out the following resources before submitting a new Feature Idea:

This is something that a teacher has requested in my school. I'm not sure if it was submitted as a feature. I hope so because as a new member, I'm not allowed to submit a new feature (not sure why this is a rule).

I'm not sure if any Feature Idea had been submitted specifically related to this original question, but I did a quick search of existing Feature Ideas. I found this one:
Add status "Incomplete" in grade book - Instructure Community (canvaslms.com)
I'm not sure if it totally gets at what you are asking for, but it might be close. You could certainly add your comments to it and give it a star rating if you like the suggestion.
As for why you are not able to submit your own Feature Ideas just yet... recently a change was made by Community Managers that New Members cannot submit Feature Ideas until you do "more of the things" (participate) in the Community. This is called "ranking up" in the Community (similar to "leveling up" in a game). One reason for this was to cut down on some of the spam posts that occasionally surfaced in the Community.
