Where can I ask students to submit ungraded optional reports and other assignments in CANVAS?

Hello there,  @mblake3 ...

In a Canvas assignment, it seems like you should be able to create the assignment with the option of "Do not count this assignment towards the final grade" selected...but keeping it so that students can still submit something to you.  Do you think this would work for your needs?  How do I exclude an assignment from the course's final grades?
