Hi @phalen2315 and welcome to the Canvas Community!
I don't know of any way to just convert a page to an assignment but I would suggest you open the page you want to use as an assignment in one browser window and open another window with the create new assignment option. Now you can just copy and past from the page into the assignment description. Set the assignment options and save and you should be good to go.
