Is there a way to convert a standard canvas course to the elementary subject view?

Can you clarify what you mean by "elementary subject view"?

If you mean the Canvas "elementary theme", then you enable that by going to Settings > Feature Options, then locate "Canvas Elementary Theme" and check the option to enable it:

Note that you will only see this option if your school as enabled the "Canvas Elementary Theming" feature option on your Canvas instance.

I am referring to Canvas for Elementary course setup, not elementary theme. I determined that the account the course is housed under needs to have Canvas for Elementary activated in order to change the course layout. The courses that were created manually did not have the feature turned on.
