I use SIS Import to import a course and it says it was successful. However when I go to look for it I cannot find it anywhere. I have no idea as to what is going on. In the past this worked perfectly but for some strange reason something seems to be removing it from Canvas instantly or it was never actually successfully imported?
The import is complete and all records were successfully imported.

In my experience when that happens and there are no errors being returned it's because something was changed about the course via the UI. For instance maybe it was previously deleted and now you're trying to place it back in with an active status?
I recommend doing your import and checking the option to override UI changes. Let me know if that does the trick!
