Does the course summary on the syllabus change for students:

- when a due date has passed; is there some kind of indicator that the assignment is past due?

- when a student has successfully completed an assignment; is there an indicator to them that it has been submitted?

Or does the course summary also remain with simply the due dates regardless of whether the assignment is past due or has been submitted?

The latter is true. The course summary remains the same. It is simply a list of events and assignments  regardless of the status of student submissions.
