In Canvas, the Microsoft Immersive Reader is currently available for "Pages" content items only. It is not available for other parts of a Canvas course such as Discussions, Assignments, Quizzes, etc. It is only available for "Pages". Here are a couple Guides for you that might be of help:

Here are some other Screen-reader apps you might want to check out.......
You may also want to check with your school's access/disability services folks. Just as you don't need to have a visual limitation to prefer using screen-reading technology, you don't need to be disabled to make use of your access services folks at your school. They know things and are usually happy to help.
