Can you create different quizzes and assign a subgroup of the class one version of the quiz while another subgroup takes a second version of a quiz?

you can absolutely do this! First you'll need your students split into groups and this can be done automatically (random) or manually (you assign the members):

Then when you're creating the first quiz assign it to one group and when you're creating the other quiz assign it to the second group.
