Hi @nadja_fitchhorn Welcome to the Canvas Community!
If your school grants teachers this permission (many do not, including mine), then these guides will help:

If there is no chance the student with be re-enrolled in your course, then I would suggest the final option. If there is a possibility of returning, then I strongly recommend deactivating the student, because on reactivation all grades and submissions are restored.
Something to remember................. If your school uses an integration between your Student Information System (SIS) and Canvas, then you must make sure that the students is removed from your course in the SIS, otherwise it will just keep re-enrolling the student every time integration runs. If you are unsure how this works at your school, then talk to your Canvas Admin.
