For one assignment, is it possible to have different due dates for each student.  I'm advising students rather than teaching a traditional class.  So they are working at different paces.  But I ultimately want them to see all the assignments listed from the beginning.  Then I want what assignment they should be working on in the to-do list over on the right hand side.

You may set different due dates on assignments for different students, sections, or groups. Canvas calls these "differentiated assignments" and here are some relevant lessons from the Canvas Instructor Guide that explain how to use them.
