One of the options in answering an essay question is "text" meaning the student enters the text where?

Your question throws me a little because I have never seen "text" as an option for essay questions. In Classic Quizzes, you just choose an essay question. In New Quizzes, there are some options, but none say "text."
To answer the question, when a quiz has an essay question, there is a box for them to enter their text immediately following the question.
In Classic Quizzes, that box uses the Rich Content Editor, so students can use basic formatting commands. In New Quizzes, you can choose whether to allow the Rich Content Editor.
