I often use "fill in multiple blanks" type questions in my CANVAS assignments that involve filling in tables. My approach is to build a table and put the answer vectors in each cell as below:
I noticed that New Quiz engine doesn't allow tables in the question stem (it doesn't appear to allow multiple lines of text or tabbed spacing either so I can't make a table manually). Is there a work-around?

Thank you for contacting Canvas Support. We're sorry to hear you've been experiencing issues with using tables for fill in the blank questions. In classic quizzes this was possible, but as of now it is not in New Quizzes. There are certainly others who also want this and we understand the need for such a feature. There are ideas and suggestions here:
