What way is the best to change the font in the content page? I am sure it can be done in HTML Editor. But does anyone has better ideas?

Chun,   you'll most likely have to do it through HTML.   I found the following comment from  @Renee_Carney ​ in a feature discussion related to fonts:  "For usability and accessibility reasons, we don’t plan on adding the ability for users to pick their own custom fonts to the Theme Editor though."

I am a high school art teacher new to Canvas. Not being able to change fonts is visually redundant and limits what I can do to enhance my students learning.  Do you know if there is a way to insert symbols other than bullets without uploading images?  Thanks very much!

Yes, you can change the font. It can be done in HTML editor. Have a look here HTML font tag.

What symbols you want to insert? You can try to make them in HTML editor. HTML Lists
