I am using the insert equation within Canvas, but cannot find the Geometry Notation that I need. Such as Segment AB written as AB with a bar over the top of it, or Arrow for Ray, or double arrow for Lines. I also need the congruence symbol and the triangles, angles and quadrilateral symbols. Please help.

Under the equation editor, switch view to advanced mode. Then you can type LaTeX for many of the symbols that are not on the palette.
The line segment is \overline{AB} as shown here.
The comprehensive list of LaTeX symbols is available, but it is often quicker to Google the one you want. Here is a shorter list of LaTeX symbols used in math. Not all symbols and environments in LaTeX are supported with Canvas, but most of the ones you'll need are.

I don't remember the exact document I linked to, so I did a quick Google search and came up with some alternatives.

Denoting Arcs
If you need to denote an arc in Canvas, use \overparen—the more standard LaTeX \overarc doesn't work. (Or at least doesn't with our MathJax deployment or using the baked-in math editor.)
Adding this here since this thread came up in my own search on this issue and I didn't see it in Canvas's own equation documentation.
