On the assumption you're an instructor, general instructions for deleting a course are in How do I delete a course as an instructor?
Does the course you are wanting to delete contain student enrollments and activity? If it does, and if it were me, I'd check with your organization before going forward with deleting it, as deleting the course will also delete all student activity associated with the course, including grades, and many if not most schools wish to keep those records available indefinitely.
If you don't see the option in Settings to delete the course, it most likely means that the local Canvas admin has disabled that capability for the teacher role, so you'll need to contact the admin or eLearning department to request that the course be deleted.
