You are correct about leaving breadcrumbs for accessibility. However, in this case the breadcrumbs do not function the way everyone expects, showing the page you just left to come to this page, and the one before that, etc. Canvas breadcrumbs defy convention and display the Canvas feature to which the current page belongs.
No one cares if the page they are on is an Assignment, a Page, a Quiz, or anything else. Breadcrumbs afford re-tracing your steps. If the Canvas breadcrumbs take you to an unexpected location, they are just as bad for people using screen readers as anyone else. Therefore you should be able to hide them.
Of course, Canvas could fix their breadcrumbs, but they've apparently been this way for a long time. Oddly enough, the breadcrumbs on this forum page work correctly.
