How do I create a practice quiz using a quiz students already completed?

You'll likely need to copy the quiz and unfortunately there is not an easy "copy" button to do that.  Usually what I do to reproduce a quiz in a course is to copy it to another course, and then copy it back in to the original course.  https://community.canvaslms.com/docs/DOC-12935-415257077 .  Once you have the copy simply edit it to be a Practice quiz instead of a graded quiz.
