The rich content editor is the area in which you will type your curriculum content within an assignment. You first have to create a page, discussion, assignment, etc.

This might help you get started with instructor resources.

How do I send emails to the class in Canvas?

As an FYI ... Canvas does not have e-mail.  It has a messaging system via the Canvas Inbox (also known as Conversations).  You can send messages to your students via the Canvas Inbox, but each of your students has complete control over how that message will be received.  Of course, they will receive the message in their own Canvas Inbox, but students can choose their own notification preferences.  For example, they may choose to turn off all e-mail notifications and only get notified about your messages via text message.  Or, some students may want to get notified via e-mail while others want to get notified via text.  It's completely up to them.  They can also choose the frequency of those notifications.  Here are some Guides:

 @heather_stockfo  has provided you with a lot of helpful resources.  I'd like to make one correction, though...which is that the RCE is not limited just to Assignments.  The RCE is found wherever you can edit course content...including Pages, Discussions, and Quizzes  Also, there is the current RCE, but there is also a New RCE which will be rolling out later this Summer.  Here are a couple additional tutorials for to look through:
