Sorry that your question has been sitting out here for almost a month within a response.  Unfortunately, I do not think this is currently possible with Turnitin and Canvas Quizzes.  In searching the Community, I found some resources for you:

 @clark_h_summers ‌, The closest you can get to using Turnitin on a Canas quiz is to use a file upload question. Once students submit, you can grab the files and scan them with Turnitin through their web portal. Does that help?
