If you are using Classic Quizzes, do you know the students who need assistance ahead of time? If so, you could consider setting up two of the same quiz (perhaps using a question bank so you don't have to start over each time) and assign one to only students who need assistance. That way your Moderate Quiz list would be shorter for that group of students to begin with, and hopefully not cause as much trouble for you.
If this is something you find yourself doing enough and you think you'll continue to be doing it, New Quizzes may be something you could consider, as it will provide you with an improved experience. Not only can you duplicate existing quizzes, but you have better search capabilities. New Quizzes allows you to modify attempts for a student across all quizzes as noted in How do I add assessment accommodations for a student in New Quizzes? You can also moderate per quiz: How do I moderate a student's assessment attempt in New Quizzes?
If you are using Classic quizzes and want to convert a quiz to the New Quizzes format, you can migrate it over: https://community.canvaslms.com/docs/DOC-26489
If those aren't an option, we have Canvas ideas! Although no new development is taking place for Classic Quizzes, you may want to contribute your use case to one of the relevant feature options I found:
