Thanks for sharing your question with us. Hope that you are well.
If you want the student's grade to show, you should enable the grade scheme. This shows students in their grade area, what letter grade they have earned.
How do I add a grading scheme in a course?
How do I enable a grading scheme for a course?
If they grade you want to give the student is different from what they earned, you will want to enable the grade override column.
How do I override a student's final grade in the Gradebook?
If you want to see what that looks likes for students, enter grades for the "test student" and use the Student View to access grades.
Hope this helps,
