My question is how/where do I place correct answers for a quiz? Is that the role of speed grader? I am uncertain of the process where a student takes the quiz and then has it graded with correct answers provided.

Depending on what version of Quizzes you are using at your school, I think it would be worth checking out these short video tutorials (quiz answers are not entered via the SpeedGrader, by the way):
