I set my assignment to a letter grade, but when students are still able to see their numerical grades e.g. (86) A in their gradebook.
Any workaround to remove the numerical grade from students?

Nope, no work-rounds for this. Just accept it as a mathematics learning opportunity for your students!
You could create a new Idea Conversation for this functionality in this community.
However, It took me seconds to find this idea already exists in Idea Conversations; and in fact, this idea has been around as long as there has been a Canvas Community and I knew that. Yes, I'm having a mood today!
