Going through the forum I don't see a clear solution. I'd like to hide grades and comments in SpeedGrader while grading is in progress. This gives me the option of returning to revise a score before I complete the grading. If one uses the 'posting policy' in the GradeBook, then apparently comments entered are not saved. It would be great if hiding/unhiding scores and comments in SpeedGrader was a possibility.

In SpeedGrader, there is an option to post or hide grades. It's the eyeball in the top-left section of SpeedGrader.
I am not sure what you mean by using the posting policy resulting in comments not being saved. They are not displayed to the student until the grades are posted, but they should be saved.

I think the following two guides may help you. The first is for individual assignments. The second is for the course
I think the eyeball that @James mentions will do the setting for an assignment (I don't use that - I always go into the options for the assignment and make sure the grade policy is manual and then hide grades if any grades have already been posted).
it says in the assignment one that instructor comments are hidden, but if students are writing comments those will be visible - that may be where the confusion on comments you mentioned comes from
