Color-coding items within modules is not a Canvas feature, because using color as the sole conveyor of meaning does not conform with accessibility guidelines (Accessibility within Canvas). Many instructors have had great success using emoji to achieve the desired differentiation, and here's a recent Q&A about that: Is there any way to add photos or other visual icons to the module titles?

Is there a way to highlight/color code names in the grade book? Many students now have accommodations which allow for extensions on due dates for assignments. It would be helpful to be able to note this in the grade book or highlight those students' names.

Unfortunately, there isn't a way to highlight or color code student names in the Grades page of your Canvas course. However, you could use the "Notes" column to write some private notes for your students that only you will see. Here's a Guide:
