There is not a native setting inside of Canvas that does this. You would need something like Respondus LockDown Browser to accomplish this.

Hi Eric, I don't use a lockdown browser, but I do let the students know that the quiz keeps a log of when they leave the quiz page, how long they take to answer a question, etc. You can see it when you use the "Speed Grader" option. If I see that they left the page multiple times or for more than a second, they will get a zero. If they have other electronics handy, they could get around it using those, but I also set a time limit on quizzes so that they can't take too long searching for answers if they do try.
