This depends on what state your course is currently in. What are the different states of a Canvas course?
If it is just unpublished then it can simply be republished. How do I publish a course?
If it has been concluded then you could try to alter the dates for the conclusion How do I change the start and end dates for a course?
If you have no luck here then you may need to contact Canvas Support. How to contact Canvas Support
