Some of my students missed the assignment due date and sent me their assignments by email. Is their any way I can upload these assignments to Canvas manually?

Unfortunately, no. However, you can still post a grade for them. It is much easier to simply keep the assignment open after the due date, and Canvas will even mark their submissions as "Late", You can even create a grading policy in Canvas to deduct points based on their lateness. if that is your practice. All of my assignments have a due date, but none of them have a close date.
Fortunately, you can also edit the assignment to move the "Until" date further out so that your students can submit the assignment in the actual assignment. I never accept assignments submitted via email.
