I assigned a Quiz on Monday that one student did not take. I tried to edit the quiz to allow him to take it by assigning it only to him and by doing so I deleted everyone else's grades. How can I restore the rest of the class grades? I tried the undelete function, but I technically haven't deleted the quiz, just made it so I've lost the grades of the class.

Keep in mind that you are not the first nor will you be the last instructor to do that!
To restore, simply edit the quiz to be assigned to everybody. That should restore the existing submissions.
In the future...........To extend the due date, use the + sign to add an additional "assign to" and select the name of of the specific student, while leaving the Assign to Everyone as is. This guide will help What options can I set in a quiz?
