I want to remove ALL restrictions from my students accessing ALL assignments for the entire term. I don't want them to be locked out if they start late, and I don't want them to have to WAIT to start a future assignment. I have gone through every single assignment (quizzes connected with the textbook) extending the deadline to the end of the term and removing the lockout for each one.
I STILL have students who can't access old assignments. Can you please tell me all the additional steps I have to take to get this done? It is a colossal time suck for me and something that ought to be much much easier.

Frustrating! Availability dates dictate when an assignment or activity is accessible to students. Removing all availability dates should make them all accessible. Due dates do not have an impact on access. If availability dates are all gone and students are still telling you they can't access items, you might want to check a couple of other things that can impact accessibility:
