Hi @heather_marsha1 - Unfortunately, there's not a good way to do this even a regular course site--much less a blueprint. One workaround may be create a new blueprint course site and the import from the older site into the new, and while doing so use the adjust due dates feature and remove the due dates, as covered here: How do I adjust events and due dates in a course import?
You might want to try the wonderful tool that James Jones designed: https://community.canvaslms.com/docs/DOC-8585-adjust-all-assignment-dates-on-one-page , though I admit I never tried basically zeroing out the due dates using this tool.
