How do I return an assignment that a student submitted blank, for them to re do it? Do I have to delete it somehow and re assign it to them?

By default assignments can be resubmitted by students as long as it hasn't passed an "until date" if entered. So what I usually do is in Speedgrader give them a 0 and add a comment asking them to re-submit (the 0 gets their attention). If you limited the number of submissions for the assignment you will need to edit the assignment to allow more than just 1.
