I know that Multiple markers/assessors can mark an assignment and a moderator of sorts can chose the final mark.
My question is if each marker uses a Rubric to score and comment on, what happens to all this rubric information once the final mark has been selected?

The rubric reviews stay as part of the assessment by the other reviewers. So rest assured they're stay put and not disappear! They basically become part of the historical record in the grading. Note that students can only view comments/rubric reviews in the submission that is selected as the final mark. Check out How do I review moderated assignments in SpeedGrader as a moderator?

Hi Erin,
Do you know where the other rubric information is being stored (Data set). The reason i ask is that as an organisation we'd like to access this information, but don't know where to find it within Canvas's Data structure?

They're contained within SpeedGrader with all the submission data. And I don't know if there is a way to pull that data specifically through the API. If you want to get more detailed, you may want to inquire in the Canvas Developers group or Canvas Admins and see if anyone has any recommendations for you.
