Sue,
The publisher will likely have resources that you can use to go in your Canvas course. I am an Instructional Designer and I work with Instructors to create and update their online courses. The first thing I do is go to the publisher for the textbook and get access to publisher resources. They usually have power points, instructor manuals and test banks. Sometimes the testbanks are in a weird format that you have to convert and import into Canvas. As Kona said, using modules will make your job easier. You will need to set the home page to modules, then it's real easy to add content and organize them. It's drag and drop! There are many Canvas tutorials available on the web, so all you have to do is google it, and you'll learn more than you can imagine. Good Luck!
