If I submit a mark for an assignment for each of my students on speedgrader, will every student see all the students marks or will the students only see their own?

Students are only able to see their own grades.  A student is never able to see grades of another student.  That would be a huge FERPA issue.

Thanks Chofer. That's comforting. I can see all student's grades and I didn't want to "publish" if the students can see what I'm seeing. Is there anything that I could mistakenly do that would allow that to happen, or is it 100% safe to publish from Speedgrader?

I'm not really sure what you mean by "publish from Speedgrader".  Students only have access to their own grades.  Here are a couple video tutorials from both the instructor and student side that show you what those views look like:

Hi again, Thanks for the videos. I watched both but they don't speak to "posting the grade". On my view, the assignment mark in question has the 'eye crossed out' symbol representing that it's unposted. my Grades section on left side of the main page says: "Disabled. Not visible to students." How do I change this?

Hello @morri06 ...

If your "Grades" course navigation button is not visible to students (you see the crossed-out eye icon next to it), you can enable this very easily by going into your course "Settings" page and then to your "Navigation" tab.  You can then enable the "Grades" button for you and your students.  Here is a Guide with more information: How do I manage Course Navigation links? - Canvas Community.  Hope this helps.
