If a quiz has unlimited attempts can the teacher see all the quizzes that you have submitted or only the latest one? Especially if the submitted quizzes are in the form of submitting pdf-files?

 You can see all of their attempts - there will be a drop-down in speedgrader to choose which one you are looking at, or you can see each of their attempts through moderate.
