I would be interested in this feature too. In the situation @susan_working describes, which I also face, some students will have one file, some will have many. My solution has been to add multiple extra file upload questions with 0 point value in an attempt to make them optional. Unfortunately that causes the quiz to continue to show up as "ungraded" until a grader goes in and explicitly enters 0 into every one of the "optional" file upload questions. It also causes students who upload just one file to be told they have not answered every question when they go to submit.
(I've begged my students to get either a free scanner _or_ a free zip file creator on their phone, but many will not. Not even when I point them to a specific cost-free, ad-free, in-app-purchase-free, nearly permission-free scanner app made by a well-known company best known for a certain dominant operating system and office suite. 😉 )
It's nice that you want to make things more comfortable for your students, and believe me, I am FULL of complaints about features Canvas lacks. But honestly, I have looked at this as a teachable moment for my students. They NEED to learn how to do this! It's basic computer literacy to combine photos into one file. The fact that I am teaching freshmen engineering students at a major university and they didn't all know how to do this was shocking to me and was all the reason I need to absolutely insist they figure it out. It's literally so easy--there are many many many ways to combine multiple images into one file--drop them into a word document, powerpoint, use a free cam-scanner app like you suggested. Heck just line the images up side by side on your computer and take a screenshot. We do students a disservice by letting them remain technologically this illiterate. I gave them a range of suggestions and told them to choose the method they like the best, but I definitely required them to do this themselves.
