I'm making really simple questions with numerical answers for learning math facts... but I'll be going further... 

Should I be using an equation editor for accessibility even at this level?  I am thinking as soon as division and fractions happen that that will be necessary...

I would recommend using the equation editor for any equation. Designing content with accessibility in mind will support all learners (learner variability).
