How do I record my screen using Canvas Studio on an iPad pro?

I believe the best method is to use the iPad's built in capability to record your screen and then upload it to Studio. Here is a guide about recording your screen on an iOS device. One gotcha is that I believe the default to have no audio so make sure to enable the microphone How to record the screen on your iPhone, iPad, or iPod touch - Apple Support  Once your recording is done it will be on your Camera Roll on the device so you just need to upload it to Studio https://community.canvaslms.com/docs/DOC-9671-50736467901

Thank you for the response Rick. However, when I do it the way you suggest, on Canvas studio I get the message "Unable to Process" on the video tile and I am unable to upload the video

How large is the video you are uploading? If you are uploading the video from your phone and it's over a minute, it's possible there are some issues. If that's the case I'd suggest you send the video to your desktop and upload it there.
