As a student, all of my courses are listed under All Courses except for the last two. I cannot seem to locate them. Why?

You will need to reach out to someone at your school such as a local Canvas administrator or someone from your school's Online Learning/eLearning department.  They would be the best ones to help you with your question.  We here in the Community wouldn't have access to your school's Canvas environment or your course(s) in question in able to help you get enrolled in those course(s) you are looking for.
