where do i go in canvas to see the students time of participation in their assignments?

I'm not sure whether you've found the answer to your question yet, but if not, you should be able to see the date and time of a student's assignment submission in the right hand sidebar in SpeedGrader. Alternatively, there are some guides that may help answer your question if you'd like to see more information about student course interactions.
