Hi  @jtittle12 . I assume you mean the image that appears on the course tile on the dashboard. I'm not sure if you're a student or a teacher but if you're a teacher, you can add an image to a course tile by going into the course settings and then choosing an image file. See this page for details: How do I add an image to a course card in the Dashboard? 

The image that the teacher uploads here will be seen by all students who have the course on their dashboard. If you're a student on the course you can't add your own image to the course tile, you will see the image that the teacher has added.

Suppose I am the teacher (since I am) and I have an image set, but I want to change it part way through the course.  Is that possible?

You can indeed change the image of a course that's already published.

One thing to watch out for though, is that it has the potential to confuse students when they see the new image on their dashboard (especially if they use the image to identify the course more than the course title!).

Aww, I am not a teacher but wanted to chang it though......

The next semester will soon arrive and I would like to update a course image before publishing the course.  I am in settings and looking at and clicking on the image, but I see no way to change it.  Can you help?

You’ll want to use this Guide, How do I add an image to a course card in the Dash... - Instructure Community.  It may be that you cannot edit the image on your own (see the blue box on the linked Guide I provided).  In that case, you would need to check with your school’s local Canvas administrator or someone from your school’s Online Learning/eLearning department for assistance.
