As an instructor, does anyone know why some images I post within a discussion assignment for students do not appear when students try to see it or (in student view) but it does appear as an instructor? In place of the image there is a picture of a lock.

Yes, it is because your image resides in a restricted folder in your Files area, or the image itself is restricted. You can see it, but nobody with a permission level lower than yours will be able to see it. See, How do I restrict files and folders to students in Canvas? for more information.
